COCONUT ALMOND GRANOLA
Ingredients
3 cups large flaked oats
½ cup shaved almonds
½ cup roughly chopped cashews
1 cup unsweetened desiccated coconut
1 Tbsp sesame seeds
2 Tbsp pumpkin seeds
1 Tsp ground cinnamon
½ cup oil (coconut, vegetable or light olive oil)
½ cup good quality pure maple syrup
¼ cup runny honey
Pinch of sea salt
1 cup dried fruit such as cherries or cranberries
Method
1. Preheat the oven to 325F. Line a baking sheet with parchment paper.
2. Mix all ingredients together in a large bowl. Tip the mixture onto the baking sheet, spread in an even layer.
3. Bake for 30 minutes, stirring halfway. Remove from the oven and stir through dried fruit, allow to cool completely before storing in an air tight container.
Nut Butter granola parfait
Stir through ½ cup of your favourite nut butter such as almond or cashew before baking. Serve with Greek yoghurt and berry compote.
BANANA GRANOLA BARS
Preheat the oven to 350F. Line a 10 x 10” tin with parchment paper. Mash 2 ripe bananas (about 1 cup) and ½ cup of almond butter into the granola mix. Tip the mixture into the prepared pan and flatten it using the back of a spoon. Bake for 25-30 minutes until golden. Cut into squares and dip into melted dark chocolate.
APPLE BLACKBERRY GRANOLA CRUMBLE
Preheat the oven to 325F. Add ½ cup of cold cubed butter and ½ cup of ground almonds to the mixture. Use your hands to crumble the butter into the granola mixture.
Peel, core and cut 4 large apples. Mix them with 1 pint of blackberries, ¼ cup of brown sugar and 1 teaspoon of vanilla. Place the fruit into a 10 x 10” baking dish. Top with the crumble mix and bake for 1 hour.
