Savoury Miso Oatmeal

For those who prefer a savoury start to the morning or something equally satisfying throughout the day, this protein rich oatmeal is a delicious start. Miso, a fermented soy paste, aids in digestion while the egg provides essential fatty acids important for brain power. Perfect post-workout or when you’re looking for something that will sustain you for a couple of hours, this warming bowl of oats is sure to revolutionize the way you eat.

Serves 1

Ingredients

1 Tsp butter or ghee

1/3 cup large flaked oats

1 Tsp sesame oil

1 Tsp tamari

1 Tbsp miso paste

1 spring onion, thinly sliced

1/2 carrot, shredded

small handful of baby spinach or shredded kale

1 egg

Kimchi (optional)

1 sliced green chili (optional)

Method:

1. In a small saucepan over medium heat, combine the butter or ghee, oats, ½ tsp sesame oil, tamari and 1 cup of water. Bring to the boil then simmer and cook for 7-10 minutes, stirring occasionally.

2. Meanwhile, heat the remaining sesame oil in a non stick fry pan. Fry the egg for 3-4 minutes until the white is opaque and the yolk is warmed through. Season with salt and pepper.

3. When the oats are cooked, remove from the heat and whisk in the miso paste. Stir through the spinach/kale until wilted.

4. Serve the oatmeal topped with spring onion, carrot, kimchi and the fried egg.
