ANYTHING GOES SCONES

Scones or biscuits? These may just be the best hybrid of both! Flakey, buttery and easy to make, these scones are the perfect all day snack. Best thing about them? You can make them ahead, freeze them and bake from frozen! They would be delicious smothered with a generous helping of butter or topped with an egg and hollandaise sauce.

To make these sweet, omit the cheese and increase the sugar to 3 Tablespoons

Ingredients

2.5 cups (350g) all purpose flour

2.5 Tsp baking powder

1.5 Tsp salt

1 Tbsp (15g) granulated sugar

½ cup (113g) butter, cold and cut into cubes

½ cup cheddar cheese, roughly grated.

100ml heavy cream, plus extra for glaze

2 large eggs

Sea Salt and Black pepper (optional)

Method

1. Preheat the oven to 375F/190C. Line a large baking tray with parchment paper.

2. In a large bowl, sift together the flour, baking powder, and salt. Add the sugar and mix to combine.

3. Add the butter cubes and using your fingers, quickly rub the butter into the flour mixture until it forms small crumbs. Add the cheddar, stirring through.

4. In a small bowl, whisk together the cream and eggs. Gradually add into the dry mix, and use a fork to help bring it together, it should be soft and slightly sticky. If needed, sprinkle in a little extra flour. Form the mixture into a ball of dough and allow to rest for 5 minutes.

5. On a lightly floured surface, roll the dough out to 1.5cm thick. Using a round cutter, stamp out scones and place them on the lined tray.

6. Lightly brush the scones with cream and sprinkle with salt and pepper if desired.

7. Bake for 12 minutes until puffed and golden brown. Allow to cool slightly before serving.

*these scones can be baked from frozen, remove when preheating the oven and bake for an extra 6 minutes.

** If you want to add fruit to these, fold it into the dough before you turn it onto the surface to knead.
